Lecithin

Lecithin is a multi-purpose ingredient used in the bakery sector as an emulsifier and anti-sticking agent. It has a positive effect on shelf life and also reinforces dough tolerance. In desserts, it is used as a stabiliser and homogeniser of fat particles. Lecithin is available in various pack types as a liquid, granulate or powder. Customised products are also possible.
